The New Year is just about here. Of course we have to bring in 2010 with two of our favorite dishes Black Eyed Peas and Cabbage w/smoked chops

Did you know that many parts of the U.S. celebrate the new year by consuming black-eyed peas. They are usually cooked with some type ham, we use sausage. Black-eyed peas have been considered good luck in many cultures. The hog, and thus its meat, is considered lucky because it symbolizes prosperity. Cabbage is another "good luck" vegetable that is consumed on New Year's Day by many. Cabbage leaves are also considered a sign of prosperity, being representative of paper currency.

Creamy Black Eyed Peas
1-Bag of Black Eyed Peas
1-Lg Can of Broth
1-Pint Heavy Whipping Cream
1-Bunch of Green Onions
1-Package Sausage (You can use brand of your choosing)
1-Tsp garlic powder
Season Salt & Pepper to taste

Rinse peas, and then soak in water over night. In large pot simmer onions and sausage in broth (you can add more broth or water if needed), add peas, garlic powder, season salt, and pepper and cook thoroughly until peas are soft. After cooking is complete, stir in heavy whipping cream (this needs to be added as last ingredient...)

Slow Cooked Cabbage

1 Head cabbage, sliced
1 Pkg Smoked Pork Chops, 1 pkg sausage or you can use cooked 1 lb bacon (cook and drain then add)
1 Onion, chopped
Salt and pepper to taste
1 Lg Can Beef Broth

Directions
In a large crock pot add sliced cabbage, onion, chops and broth. Season to taste. Cover and cook in crock pot until Cabbage is tender.

If you remember about a month ago I started taking Colonix Colon Cleanse by Dr. Natura. Sorry for the delay in posting my results, I had to stop taking it for about a week because I was so sick. (nothing to do with the product, I just had the flu bug)

With Colonix my bowel movements have been more frequent and much more productive. Every morning I take my capsules and my powder and like clockwork I have my morning bowel movement. Before I started taking Colonix I would have days of constipation and then bouts of diarrhea, and now I feel so much better.

I haven't had bowel movements like the ones posted on their site but I did have some pretty strange looking ones. I thought about posting pics but I just couldn't share that much of myself. It's pretty funny, every time I went I was like a child so excited to see what I had done.

I'm actually going to extend my cleansing and do another month. I think I need it, I have too many years of build up inside of me that is ready to come out. Prior to taking Colonix I was never regular, now I feel like my body is finally on a schedule.

Wordful Wednesday

I love finding old pictures of family members, especially when they are family members you never got to meet. While my family & I were visiting my in-laws I stumbled across a bunch of old pictures of my husband's family.


This is hubby's great-grandmother, it has been told to me that she had a decent amount of Native American in her. Of course that got me excited because I am a quarter Yaqui. Hopefully I can find out how much Native American she was so I can do the calculations for my kids.

Here is hubby's grandmother. I absolutely love her outfit, hairdo, & the flowers in her hair! She looks beautiful & wish she could have met her great grandkids but unfortunately she passed away when my hubby was a child.

Tasty Tuesday

Last week my husband bought a book called The $7 a Meal Cookbook by Linda Larsen. I was determined to find a quick & easy meal for my family (mainly due to the fact that we desperately needed to go grocery shopping). After a few minutes of skimming through the book I found a recipe called Mexican Chicken Pizza. The recipe below calls for 2 chicken breast (cubed) but I used a 12.5 oz. of canned chicken.

Serves 6
Ingredients:

  • 6 flour tortillas
  • 1 (15 oz.) can refriend beans
  • 1/2 cup taco sauce
  • 2 tsp chili powder
  • 2 chicken breasts, cubed
  • 1 cup shredded Cheddar cheese
  • 1 cup shredded part-skim Mozzarella
Directions:
  1. Preheat oven to 400. Place tortillas on two cookie sheets and bake for 5-8 minutes until tortillas are crisp, reversing the cookie sheets during cooking time and turning tortillas over once.
  2. In medium bowl combine beans, taco sauce, and chili powder. Spread mixture over the baked tortillas. Top with chicken and cheeses.
  3. Bake for 12-18 minutes or until pizzas are hot & cheese is melted and begins to brown down. Reverse cookie sheets once during cooking time. Serve immediately.

This week my friend Chriselda took some great photos of my daughter & I. I am so thankful for these pictures because they are an adorable keepsake for us. I love the one of my daughter in the tea cup because she looks so tiny. Haha in reality Maleah is not that tiny anymore; she weighs 12lbs 6oz!

Magical Peanut Butter Cookies
Ingredients:
  • 1 cup of peanut butter (crunchy or creamy)
  • 1 1/3 cups baking sugar replacement (recommended Splenda)
  • 1 egg
  • 1 teaspoon vanilla extract

Preheat the oven to 350 degrees F. Grease a large baking sheet.

In a mixing bowl, combine the peanut butter, 1 cup sugar replacement, the egg, and vanilla, and stir well with a spoon. Roll the dough into balls the size of walnuts. Place the balls on the prepared baking sheet. With a fork, dipped in sugar replacement to prevent sticking, press a crisscross design on each cookie. Bake for 12 minutes, remove from the oven, and sprinkle the cookies with some of the remaining sugar replacement. Cool slightly before removing from pan.


I was surprised how well these cookies came out. I thought for sure they were going to come out funky because there is no flour in them. They are truly magical because somehow they manage to rise & turn into delicious cookies. These cookies taste just like any other peanut butter cookies, the only difference is that they are healthier.

I was sent a V.Smile Motion Active Learning System to review & I could not wait to set it up for my son. Jae'Sun stood next to me saying, "Oooh mommy what's that? Is that my game? I want to play! Prrrretty please." Setting it up is super easy! Just insert the batteries into the game console & into the controller. Then connect the game console to your TV using the A/V cable that comes with it, insert a game aka Smartridge, & now your child is ready to have fun learning!
Now if you're like me then you are pretty bummed out to read that both the console & controller use batteries, however, I read that you can purchase a AC/DC adapter. Maybe future systems will include it in the package.



V.Smile Motion Active Learning System was made especially for kids ages 3-7. There are simple on/off buttons on the front of the console with sun/moon pictures for the child to understand. The wireless motion controller is adaptable for right- or left-handed players, which is something I appreciate because Jae'Sun is left-handed. As for the games, there are a bunch of your child's favorite characters including Scooby-Doo, Thomas the Tank Engine, Winnie the Pooh and Spider-Man, Disney Fairies & list goes on. Most games are motion activated (very much like a Wii controller) & other games require use of the joystick/buttons. Overall, the V.Smile Motion Active Learning System is super easy for kids to use & your child has endless fun learning things like letter, numbers, & etc. Definitely mom approved!

Wordful Wednesday

I'm a little bummed out that I have yet to meet my new niece. She lives in Texas & I live in California. If plane tickets weren't so darn expensive, I could go meet her & smother her with kisses. Until the day I can meet her I have to settle for pictures. Just the other day my mom sent me a recent picture of my niece, Karissa:
Oh my goodness she is beautiful! Karissa will be 3 months old on Christmas...Time goes by too fast. It seems like just yesterday I was bossing my little brother around & now he is a dad to this beautiful little girl. :(

Tortilla Soup Recipe

8-10 (6-inch) corn tortillas
1/4 cup oil
1 small onion, chopped (1/2 cup)
2 cloves garlic, finely chopped
1 medium Anaheim, poblano or jalapeƱo chile, seeded, veins removed, chopped
4 cups chicken broth or homemade chicken stock
1 can (14.5 oz) diced tomatoes, undrained
1/2 teaspoon salt
1 1/2 cups shredded cooked chicken
1/2 cup shredded Monterey Jack cheese (2 oz)
Chopped fresh cilantro
1 lime, cut into wedges

1. Cut tortillas in half, cut halves into 1/4-inch strips. In 3-quart saucepan, heat oil over medium-high heat. Fry strips in oil, 1/3 at a time, until light brown and crisp. Remove from pan; drain on paper towels and set aside.

2. Heat oil remaining in saucepan over medium-high heat. Cook onion in oil 2 minutes, stirring frequently. Add garlic and chile; cook 2 to 3 minutes, stirring frequently, until vegetables are crisp-tender. Stir in broth, tomatoes and salt. Heat to boiling. Reduce heat; cover and simmer 15 minutes. Add cooked chicken; heat until hot.

3. Divide half of tortilla strips among 4 individual serving bowls add in the soup. Top with cheese and garnish with remaining tortilla strips and cilantro. Serve with lime wedges.
