Tasty Tuesday

For those of you that don't know, my husband will be leaving on April 13th until the end of Sept. (Navy...enough said!) Well last week he took leave to spend time with the kids and I. While he was home he helped out with laundry, dishes, and even cooked! One night he decided to make Chicken Cordon Bleu and was excited to find a simple recipe:

Chicken Cordon Bleu
Ingredients:
4 skinless, boneless chicken breast halves
1/4 teaspoon salt
1/8 teaspoon ground black pepper
6 slices Swiss cheese
4 slices cooked ham
1/2 cup seasoned bread crumbs
Directions:
1. Preheat oven to 350 degrees F (175 degrees C). Coat a 7x11 inch baking dish with nonstick cooking spray.
2. Pound chicken breasts to 1/4 inch thickness.
3. Sprinkle each piece of chicken on both sides with salt and pepper. Place 1 cheese slice and 1 ham slice on top of each breast. Roll up each breast, and secure with a toothpick. Place in baking dish, and sprinkle chicken evenly with bread crumbs.
4. Bake for 30 to 35 minutes, or until chicken is no longer pink. Remove from oven, and place 1/2 cheese slice on top of each breast. Return to oven for 3 to 5 minutes, or until cheese has melted. Remove toothpicks, and serve immediately.


This recipe is so good, however, my husband informed me that "real" Chicken Cordon Bleu is even better. Haha. Either way you'll love this simple delicious recipe!

2008’s Earth Hour had over 50 million participants around the globe. This year they are hoping for more. Already several major US cities have pledged to take part. Currently there are over 405 cities in 74 countries have pledged to turn out their lights for 60 minutes. That’s over double of the number of cities from last year.
Earth Hour is celebrated Sat March 28th at 8:30 pm in your local time zone. It is just like New Year’s Eve. It’ll start in New Zealand and sweep across the globe through all the time zones creating beautiful darkness for all those that choose to participate. You can sign up at http://www.earthhourus.org/, there you will also find links to other countries and events participating in Earth Hour. You can even start your own family tradition by participating every year.

Wordful Wednesday

Here is baby #3! My husband and I were so surprised of the size of the baby. My silly husband kept saying "Man, it's head is huge!" I kept reminding him that the body will catch up soon, the head is always large in the beginning.
Anyway, the ultrasound is so clear and you can see everything. Aww, that little light speck above the baby's belly is it's hand. The baby was flopping around as if it had the hiccups. Call me crazy but I swear I can feel the baby fluttering inside me. Gosh, this baby sure was a surprise (I was using NuvaRing) but boy am I happy that we will soon be having another child. :)

Tasty Tuesday

For today's tasty Tuesday, I thought I'd let you try my mom's recipe for Enchilada Casserole. It is wonderful. You can use this recipe as a guide and add more or less of the ingredients, depending on how much you want to make.
Yesterday I went to someones blog and took a "fats test" needless to say I scored really bad. I had only 3 out of 10 answers right. Basically I don't know my good fats from my bad fats and boy does my body show it. I'm not quite sure where this recipe falls in the different fat categories but it sure is good.

Just to let you all know every recipe we post, yes we have tried. I wouldn't want to post something we ourselves have not tried before.

What you will need:
1-2 lbs of Ground Beef
1-package of corn Tortillas
1-2 lg cans of Enchilada Sauce
1/2 cup Green Onions(chopped)
1 can of Olives (if you like them, I don't use these)
1-package of Cheese
Oil (Yikes, this sounds like alot of fat)

Preheat oven to 375
Heat oil in large pot, enough to soften all the tortillas (not drenched in oil but just enough to soften. Cook ground beef until no loner pink (season beef to taste), drain and set aside. Cut up the tortillas into triangular pieces, not too big. When oil is heated and place cut tortillas in heated oil until all are soft. Add ground beef, onions and olives if you are using them, and mix well. Add your enchilada sauce, use enough so that it is not dry, generally I use more so it is a little on the wet side-since you will be baking it a few minutes. Stir in your cheese. Place in casserole pan and top with additional cheese. Bake until cheese has melted and there you have it.

CVS on a Ten Dollar Budget

I would like to mention that the Contour Monitors also have a rebate. I know there are so many stories about this, most stating you wouldn't get the rebate because you used a Q and got it for free. Well I sent mine in and yes, I received my rebates. I read on someone's blog that if you mark out the total you paid and the coupons on your receipt that you would get the rebate so I decided to do that" just in case". Well it turns out the ones I had marked out were returned stating they would not accept altered receipts but the ones I did not alter I did in fact receive rebates. Also the rebate say it ended but it says to call so that's what I'll do and hopefully I'll still be able to take advantage of the rebate.
