Flat Green Chili Enchilada
Here's what you'll need:
2 cans-Ortega Spicey Diced Green Chili (I had both Ortega or store brand-stick with the Ortega)
Boneless Chicken-amount depends on how much chicken you want in each and how many you are making
1-Lg can Cream of Chicken soup
Cook your chicken, after cooked cut into sm pieces (it should just fall apart) and set aside, heat cream of Chicken soup in sm pan use 1/2 can of water as you want it a little thick, (I used the broth from the cooked chicken), Now just make these as you go, place small amount of oil in a fry pan and fry two tortillas at a time just until soft, place on paper towel to drain a little, place one tortilla on plate cover with sauce, add layer of chicken and green chili, add a layer of cheese, place the other tortilla on top, add another layer of sauce, then add cheese, top with shredded lettuce and there you have it.
