I can't remember ever trying yellow squash or pimentos, so I wasn't sure how they would taste. This recipe may not look too good in this picture but it is really good. It is low in fat which makes it even better, at least for me it does.

Summer Squash Casserole

1 LB Cut Yellow Squash
1/2 C Chopped Onion
2 (4 oz) Jars Diced Pimentos DRAINED
1/4 C Chopped Green Bell Pepper
1 Egg
2 Tbsp Low Cal Mayo
1 Tbsp Salt
1/4 C Low Fat Shredded Cheese

Cook squash in boiling water for about 15 minutes or until tender. While this is cooking mix onions, pimento, bell pepper, egg, mayo and salt in a bowl. Stir in drained squash and cheese, mix together. Spray casserole dish with cooking spray and spoon in mixture. Bake at 350 degrees for about 30 minutes.
