Jalapenos so this is a treat for me. If you can't eat them because they are too hot, you can boil them a little longer. The longer you boil the jalapenos the milder they become, the only problem is they won't be as firm but just as tasty.
**UPDATE** This was a tip I just received from Bonnie in California: She says adds Cilantro to her stuffed jalapenos. I'm going to have to try that it sounds great. Thanks for the tip Bonnie
20-25 Medium size Jalapenos
1-Package Cream Cheese
3-Cups of Shredded Cheddar Cheese or you can you the canned Nacho Cheese (This is what I use)
Cut Jalapenos in half lengthwise and remove seeds. Boil for about 5-8 minutes. drain, rinse and set aside. In a small bowl mix Cream cheese and Cheddar until smooth. Spoon cheese mixture into jalapenos and sprinkle with bacon bits. Place on greased baking sheet. Bake at 400 degrees for about 5-10 minutes.
