Tasty Tuesday

Here is a super easy & filling meal to make tonight! It's called hamburger rice soup. One thing that I love about this meal is that you can easily add/omit ingredients to satisfy everyone's taste buds. I didn't have potatoes or carrots so I added a can of corn & more rice. I would highly recommend that you make sure you put enough seasoning because with all the liquids, it's easy to dilute the flavor. Also try seasoning the ground beef while browning it to add even more flavor!

Serving Size: 6
  • 1 pound of ground beef
  • 2 (14.5 ounce) cans diced tomatoes
  • 2 cups cubed potatoes
  • 2 carrots, chopped
  • 1 onion, chopped
  • 4 teaspoons salt
  • 1/4 cup uncooked white rice
  • 1/8 teaspoon ground black pepper
  • 6 cups water

  1. In a large saucepan over medium heat, saute the ground beef for 5 minutes, or until browned. Drain the excess fat and add the tomatoes with liquid, potatoes, carrots, onion, salt, rice, black pepper and water. Bring to a boil and reduce heat to low. Simmer for 1 hour and serve.
