Tasty Tuesday

My friend Mildred gave this recipe. I wasn't sure about it because I had never tried Eggplant before. Tell me who would try a new recipe out when you have company coming? Well I did, good thing it was my parents. Everyone loved it, even my most pickiest eater.

Eggplant Parmesan

1-Pkg Shredded Italian Four Cheese (you can use your choice of cheeses, I just like this kind
1-Pkg Parmesan Shredded Cheese
1-Can Spaghetti Sauce

Slice eggplant into 1/4" slices and set aside. Place enough flour to coat eggplant into a container, I use a gallon zip lock so I can shake it up. Add seasoning to the flour, garlic powder, salt , pepper, season all. Put 3-4 slices in the bag and shake until eggplant is thoroughly coated. Place a little oil in pan and brown slices a little on both sides. Place browned slices in non stick baking dish. Spoon spaghetti sauce onto each slice & top with Italian cheese, layer another slice onto each. Add more sauce, top with Parmesan cheese. Bake until cheese is melted.

That looks so yummy!. I have to admit that I have never tried that dish in my life and that I actually popped over here, because the picture on my blog roll looked like deep dish pizza. lol However, something that looks that tempting has to taste divine. One of these days, I am going to make it for sure. Thanks for sharing!
