Tasty Tuesday

MINESTRONE SOUP
8 oz of Italian Sausage (casings removed) I used two packages of hot Italian sausage
1 Onion chopped
3 cloves of Garlic, chopped
1 Carrot, chopped
3 Celery, chopped
4 Cups Chicken Broth
1 15 oz Can Diced Tomatoes with juice
2 Cups Chopped Fresh Swiss Chard (you can find this at Whole Foods)
6 oz Medium size Pasta Shells
1/2 Grated Parmesan

Cook Sausage, breaking it up as you stir. Cook until no longer pink. Take sausage out, drain and set aside. Leave a little of the sausage oil in pot and add onions, garlic, carrot, and celery. Cook until vegetables have softened a bit. Add broth, tomato with the juice, and 3 cups of water. Add sausage, and chard, simmer about 20 minutes. Stir in pasta a cook a few minutes more until pasta is tender. Top with parmesan cheese.
