Tasty Tuesday

Last week my husband bought a book called The $7 a Meal Cookbook by Linda Larsen. I was determined to find a quick & easy meal for my family (mainly due to the fact that we desperately needed to go grocery shopping). After a few minutes of skimming through the book I found a recipe called Mexican Chicken Pizza. The recipe below calls for 2 chicken breast (cubed) but I used a 12.5 oz. of canned chicken.

Serves 6

  • 6 flour tortillas
  • 1 (15 oz.) can refriend beans
  • 1/2 cup taco sauce
  • 2 tsp chili powder
  • 2 chicken breasts, cubed
  • 1 cup shredded Cheddar cheese
  • 1 cup shredded part-skim Mozzarella
  1. Preheat oven to 400. Place tortillas on two cookie sheets and bake for 5-8 minutes until tortillas are crisp, reversing the cookie sheets during cooking time and turning tortillas over once.
  2. In medium bowl combine beans, taco sauce, and chili powder. Spread mixture over the baked tortillas. Top with chicken and cheeses.
  3. Bake for 12-18 minutes or until pizzas are hot & cheese is melted and begins to brown down. Reverse cookie sheets once during cooking time. Serve immediately.
