Wordful Wednesday

Hi everyone! In case you missed it: I finally had my baby girl!!!!
I was induced on Saturday night (9/26) due to lab results confirming that I had Cholestasis. On Sunday at 11:15 a.m. Ms. Maleah Ja'Zelle was born, weighing 8lbs 1oz & measuring 20.5 inches long. Maleah & I were set to come home on Monday morning but Maleah was jaundice. Soooo my poor baby girl had to stay an extra day so she could receive phototherapy. After many hours of phototherapy we were finally discharged from the hospital on Tuesday afternoon. Ahhhhh it is so nice to be home with my husband & kids! I would like to thank all my blogger friends/twitter friends for checking on me. Enjoy all my pictures of our newest addition!

Tasty Tuesday

I felt like eating this so I thought I'd share. My mom makes "THE BEST" Capirotada.

CAPIROTADA (MEXICAN BREAD PUDDING)

Ingredients:
2 cups water
1 cup Brown Sugar
1/2 cup Granulated Sugar
1 stick cinnamon
2 tablespoons cinnamon
1 teaspoon vanilla
12 slices French bread (1/2 inch thick)
2 cups Cheddar cheese, grated
1 cup raisins

Peanuts

1.Preheat oven to 350 degrees F. Toast the bread on both sides and set aside.
2.Combine the water, Brown Sugar, Granulated sugar, cinnamon stick, cinnamon, vanilla and in a saucepan and bring to a boil. Set aside.
3.In a baking dish, arrange a layer of the bread, sprinkle with a layer of cheese, then raisins and pour some of the syrup on top after each layer. Continue this process until all of the ingredients have been used. Top with peanuts
4.Bake for 1 hour. Eat it hot or cold.
Yield: 12 servings

Wordful Wednesday

Now that my husband is home, we had the chance to relax with friends. We ordered a 28 inch pizza from a pizza parlor in Serra Mesa (CA). With 8 adults at the house eating this huge pizza, we still ended up with half of it leftover! Boy was it filling & just entertaining to look at! LOL.

Tasty Tuesday

This easy recipe is called Spaghetti Pie. I wish I had a picture to post but the spaghetti pie was so yummy it was gone before I could take one (Note to self: Take a picture before you serve). Although the recipe calls for spaghetti noodles, I used Penne because it holds the meat mixture well. Serve with a salad & breadsticks...(as Rachael Ray would say) Yum-o!

Ingredients:

1 pound spaghetti

1 pound lean ground beef

1/4 teaspoon salt

1/4 teaspoon ground black pepper

garlic powder to taste

1/2 cup chopped green bell pepper

1 (26 ounce) jar pasta sauce

3/4 cup sour cream

1/2 cup chopped green onions

1/2 (8 ounce) package cream cheese

1 1/2 cups shredded Cheddar cheese

Directions:

1. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
   


2. Preheat oven to 350 degrees F (175 degrees C).
   


3. In a skillet over medium heat, brown the ground beef. Drain and crumble. Put crumbled beef in skillet. Stir in salt, pepper, garlic powder, bell pepper and pasta sauce. Bring to a boil; reduce heat and simmer for 20 minutes.
   


4. In a small bowl combine sour cream, green onions and cream cheese and set aside. Coat a 9x13 inch baking dish with cooking spray and add the cooked spaghetti. Spread the cream cheese mixture over it, add the meat mixture and sprinkle with Cheddar Cheese.
   


5. Cover and bake for 25 minutes. Uncover and bake for 5 more minutes until the cheese is bubbly.

Wags on A Ten Dollar Budget

Today I started with $6.00 RR from last week. This was the worst experience I have ever had at Walgreens. I had my plan with me and apparently the cashier knew more about my plan than I did (or at least she thought she did). They didn't have the 409 in stock which I was counting on, and they only had three of the Oils in stock. This cashier looked through the coupons and arranged them the way she wanted instead of how I handed them to her. She scanned my RR first, then when she would get to the last coupons she would say, oh they won't go through. I asked well did you ring these up (my Fillers) then she says to me no I didn't because you don't need those. Tell me how does this cashier know what I need or don't need. If fact the fillers were actually scented pencils I wanted to buy my granddaughter. She then said to me that I could not use the coupons because I was getting back RR and the system won't let me use the coupons. I asked her to just ring up the additional items then scan the coupons. She did and yes it worked. After that my whole shopping trip went down hill. Okay here is what I finally bought:

Tip-a-licious Thursday/Tasty Tuesday

Normally we post our recipes on Tuesdays but we had a special request for this one. So we decided to post it early, so here you go Karen this one is for you.

Carnita Style Tacos/Cooked on the Grill
You still have time to fire up that grill. You can cook these on the stove but they are so much better grilled.

Ingredients:
4 beef Shoulder Top Blade Steaks
1 Pkg Corn Tortillas
1 Onion, Chopped
1 Bunch Cilantro
A few Lime Wedges

For your Marinade you will need:
1 Cup of the Tomatillo Salsa from Tuesdays recipe
1/3 Cup Chopped fresh Cilantro
2 Tbsp Lime Juice
2 Tsp Minced Garlic
1/2 Tsp Salt
1/4 Tsp Pepper

1. Combine all the marinade ingredients in a small bowl. Place the beef steaks and marinade in a zip lock bag, turning to coat thoroughly. Marinate in refrigerator for a couple of hours.

2. Remove Steaks and place on grill until thoroughly cooked, turning occasionally.

3. Carve steaks into thin slices. Serve in tortilla. Top with onions, cilantro, a squeeze of lime, and of course more Tomatilla salsa.

Our countdown is over! On Monday my husband & father returned home after a 5 month deployment! It was a very emotional day & we are so glad to have them back at home. Here is a short article from San Diego Tribune along with a short video from NBC San Diego:

Amphibious assault ship set to arrive in S.D. today

2:00 a.m. September 14, 2009

SAN DIEGO: A new Navy amphibious assault ship will arrive in San Diego today after its trip around South America from the Mississippi shipyard where it was built.

The Makin Island is scheduled to reach San Diego Naval Base at about 2 p.m. with a crew of roughly 1,000 sailors, a Navy spokeswoman said. It left Ingalls Shipyard in Pascagoula, Miss., on July 10 and stopped in several countries, including Brazil, Chile and Peru.

The Navy is billing the Makin Island as a “green” ship because of energy-saving innovations to its propulsion system, electrical plant and water purification system.

A commissioning ceremony is set for Oct. 24 in San Diego.

Tasty Tuesday

I just made this today, to go with our tacos we had for dinner.

Tasty Tomatillo Salsa

Ingredients
1 1/2 lb tomatillos
1/2 cup chopped white onion
1/2 cup cilantro leaves
1 Tbsp fresh lime juice
1/4 teaspoon sugar
3 Jalapeño peppers OR 3serrano peppers, stemmed, seeded and chopped
Salt to taste
Garlic Powder

1 Remove papery husks from tomatillos and rinse well.

2a Roasting method Cut in half and place cut side down on a foil-lined baking sheet. Place under a broiler for about 5-7 minutes to lightly blacken the skin.

2b Boiling method Place tomatillos in a saucepan, cover with water. Bring to a boil and simmer for 5 minutes. Remove tomatillos with a slotted spoon.

2 Place tomatillos, lime juice, onions, cilantro, chili peppers, sugar in a food processor (or blender) and pulse until all ingredients are finely chopped and mixed. Season to taste with salt. Cool in refrigerator.

Serve with chips or as a salsa accompaniment to Mexican dishes.

Ooooh don't we all dread wrinkles?!
The aging process is something we all frown upon & wish we could stop! Keep in mind that there are a number of factors that contribute to wrinkles, some of which you can avoid.

According to MedicineNet.com:
Factors that promote wrinkling include:

• Smoking
  
• Light skin type (people with blue eyes and easily burned skin are more prone to sun damage)
• Heredity (some families wrinkle more)
• Hairstyle (some styles provide cover and protection against sun damage)
• Dress (hats, long sleeves, etc.)
• Occupational and recreational habits (farming, sailing, golfing, using tanning booths, and so forth)

Some of these factors are beyond our control. The main preventive measures we can take are to minimize sun exposure and not smoke.

If you research wrinkle prevention you'll find so many EXPENSIVE creams and/or cosmetic procedures. Personally I couldn't imagine spending thousands of dollars on a cosmetic procedures/spa treatments! There are natural ways (that won't break your pockets) to reduce wrinkles.

Here's a recipe for you to try:
The following recipe will smooth away any wrinkles and moisten dry skin on your face using natural ingredients.

*Recipe below is enough for 1 treatment

• 1 egg
• 4 fl oz/115ml coconut oil
• 1 tablespoon honey

Place the egg in a small bowl and beat it thoroughly. Slowly add the honey and coconut oil, beating until the mixture is about the same consistency as mayonnaise. Take a left over empty toilet roll and place plastic wrap over one end to hold the mixture in. Hold it upright over the bowl and spoon the mixture into it. Place the roll in the freezer.

To use, peel away some of the cardboard and rub the frozen stick over your face and leave for 5-10 minutes. Rinse off with warm water. This mixture will keep for several months in your freezer if after use you cover the used end with some more plastic wrap and return it to the freezer.

Tuesday was the first day of school for San Diego kids. My daughter started the 4th grade & her 10th birthday is this Friday! What an eventful week!

I honestly don't know why my daughter put on a sweater seeing as it's still in the 80s here in San Diego. LOL. My son was excited to be at school but he didn't understand that we were just dropping off his sister. He was a little upset but he got over it. I'm pretty sure my daughter was excited to have time away from him....FINALLY! Haha. Overall it was a great day & my daughter loves being back at school. We'll see how quickly that changes. :)
