Albondiga Soup (meatball soup)

I've been craving this, so I decided I would make it today. Thanks mom for the recipe. Serve this with tortillas on the side. Yummy, I can't wait. Of course it won't be as good as mom's.


Ingredients:
1 medium onion, cut in quarters
1 clove garlic, minced
2 Tablespoons cooking oil
4 cups water
1 lg can condensed beef broth
1/2 bag of frozen Veggies
4 medium potatoes, peeled and cubed
1 cup ea of Chopped Carrots and Celery
1 beaten egg
1/4 cup snipped cilantro
1 teaspoon salt
1/2 teaspoon dried oregano, crushed
1/8 teaspoon pepper
1 pound ground beef (you can more, if you want more meatballs)
1/4 cup long grain rice

Preparation:
In large pot cook onion and garlic in hot oil till onion is tender but not brown. Stir in water, broth, and tomato paste. Bring to boiling; add potatoes, frozen veggies, celery, carrots. Simmer for 5 minutes.

While this is simmering -combine egg, cilantro, salt, oregano, and pepper. Add ground beef and uncooked rice. Mix well. Form mixture into 1-inch meatballs.

Add meatballs, to the simmering soup. Return soup to boiling; reduce heat and simmer about 30 minutes or till meatballs and vegetables are done.

I will have to try this! I always think of that movie Fools Rush In whenever I hear albondigas - it was Selma Hayek's character's favorite.

Haha. Love that movie! Opposites do attract....oh it does help when alcohol is involved too. :)
