Whole Wheat Flax'n Apple Cinnamon Muffins

1/4 cup Hodgsons Mill Milled Flax Seed
3/4 cup Whole Wheat Flour
3/4 cup White Flour
1/2 cup sugar ( or substitute with Splenda)
2 tsp Baking Powder
1/2 tsp Baking Soda
2 tsp Cinnamon
1 Egg beaten
1 1/2 cup Chopped Apples
3 tbsp Vegetable Oil
1/2 cup Milk
1/2 cup Chopped Nuts

Blend all dry ingredients. In separate bowl combine egg, oil and milk. Add dry ingredients to milk mixture. Mix well. Fold in apples and nuts. Fill into well greased muffin cups 2/3 full. Bake at 400 degrees for about 18-20 minutes.

these look sooo good! Do you think you can make them with all whole wheat flour? Im on South Beach and cant do white flour

I don't see why not. My mother thought about trying it out but decided to just follow the recipe. However, if you try it please let us know how it came out.
