Tasty Tuesday

Tomorrow is my sons Birthday, so I decided I would make him his favorite cake. If you've never tried it, you just don't know what you're missing. It is so good.

Tres Leches Cake

1 1/4 Cups Cake Flour
1 Tsp Baking Soda
1 Cup Sugar
1/3 Cup Vegetable Oil
1 Tsp Vanilla Extract
5 Eggs
1 Cup Milk (divided)
1 Cup Sweetened Condensed Milk
1 Cup Heavy Cream

For The Icing:

3/4 Cup Heavy Whipping Cream
1 Tbsp Sugar
1 Tsp Vanilla Extract

Mix the flour and baking powder. Set aside. In a large bowl combine sugar, oil and 1 tsp vanilla and mix well. Add the eggs one at a time, mixing well. Stir in 1/2 cups of milk. Fold in the flour mixture a little at a time. Pour into lightly greased pan. Bake at 325 degrees for 20-25 minutes or until done. Cool to room temperature. Pierce the cake with a fork all over the top and refrigerate for 30 minutes.

Whisk the remaining milk, condensed milk, and 1 cup of heavy cream in a bowl. Pour gradually over chilled cake. Chill in refrigerate for about an hour. Beat 3/4 cup heavy whipping cream, 1 tbsp sugar and 1 tsp vanilla in a bowl until soft peaks form. Spread a thin layer over the cake. Garnish with a sprinkle of cinnamon. Keep refrigerated.
