Bake-ilious Butternut Squash Fries

If you're like me I love fries, but fries don't like me. I'm currently back on my Rightsize weight loss program, so I'm always searching new low fat recipes. I was a little skeptical about the whole squash thing , but I found it to be quite tasty. After seeing the calorie and fat content of real fries from a local fast food place, I was really excited about trying it. Remember a moment on the lips is a lifetime on the hips, I don't know who thought of this saying but it sure is true. You do the math:

Butternut Squash Fries (Makes 2 servings)
Calories 125 per serving
Fat 0.5 g

Fast Food Chain (Approx. same serving size)
Calories 500
Fat 25g


2 lb Butternut Squash
Season Salt
Non Stick Spray

Preheat oven to 425 degrees. Using a sharp knife slice the ends off the squash. Then cut in half length wise. Peel the squash with a vegetable peeler and remove seeds. Using the knife or crinkle cutter (if you have) cut the squash into spears. Pat the fries with a paper towel. To ensure they are dried off, let them stand for about 5 minutes. Next spray baking sheet with non stick spray and place the spears on baking sheet. Bake for 20 minutes, then carefully flip the spears and bake another 20 minutes or until crispy on the outside.
