Grilled Chicken with Watermelon Glaze

1 Small Watermelon
1/12oz Jar Apple Jelly
Juice & Zest of 1 Lime
2 Tsp Red Chile Flakes
2 Tsp Jalapeno Hot Sauce

2-3 Lbs of Chicken
1/2 Tsp Salt

Cut Watermelon in chunks (about 4 cups, cut the remaining watermelon into wedges and save for serving. Blend watermelon and strain. Save 1 Cup of juice and freeze the rest for another time. In a small sauce pan melt jelly over low heat. Stir often. Stir in 1 cup of watermelon juice, add chili flakes, jalapeno sauce, lime juice & zest and a pinch of salt. Adjust seasoning or chili to taste. Remove from heat. Set aside 1/3 Cup of Glaze

I used my Flowave but the recipe calls for grilling. Brush chicken with olive oil. Season both side with salt and pepper. Place chicken skin side down on grill. Grill for about 25 minutes, then chicken over and brush with the remaining glaze. Grill 25-30 minutes longer or until done. Brush with glaze a few more times while cooking. Remove chicken and brush with the glaze that you set aside. Serve with fresh watermelon wedges.
