Tasty Tuesday

Three weeks ago we posted a recipe of my grandma's scrumptious Pumpkin bread. This week we are posting a creative version of her recipe: Pumpkin bread baked in a Pumpkin!


Pumpkin in a Pumpkin
1 Small Pumpkin
3 1/2 Cups Flour
1 Tsp Baking Powder
2 Tsp Baking Soda
1Tsp ground Cloves
1 Tsp Ground Cinnamon
1 Tsp Ground Nutmeg
1/2 Tsp Salt
2 Cups Solid Packed Pumpkin (the real deal not pie filling)
1 Cup Crisco Oil
3 Cups Sugar
3 Eggs
1 Cup Chopped Walnuts
1 Cup Raisins

Clean the pumpkin well. Cut top off and scoop out the pumpkin seeds. Once clean, set aside.
Preheat oven to 350 degrees. Mix flour, baking powder, baking soda, cloves, cinnamon, and nutmeg. Set aside. With mixer combine pumpkin, oil, sugar and eggs. Add dry ingredients and mix well. Stir in walnuts and raisins. Pour batter into the pumpkin but make sure you leave some room for the bread to rise. Bake for 50-55 minutes or until toothpick comes out clean when inserted. Once your bread is done and cooled, slice it into pieces and enjoy! In case you were wondering - YES, you can eat the inside of the pumpkin as well!
