Squash &Tomato Quiche Cups

2 Cup Chopped Butternut Squash
2 Tsp Olive Oil
12 Slices Wheat Bread (with crust removed)
12 Cherry Tomatoes, halved
1 Pkg Cream Cheese
3 Eggs or substitute with egg whites
1/4 Cup Whipping Cream
2 Tbsp Chopped Fresh Chives
Salt and Pepper

Heat oven to 400 degrees. Toss squash with oil and spread onto baking sheet. Bake for about 15 minutes or until tender. While this is cooking flatten bread with rolling pin. Press a slice of bread onto the bottom and sides of each muffin pan. (Spray muffin pan first) Combine squash and tomatoes and spoon into bread cups. Beat remaining ingredients until well blended. Spoon mixture over squash and bake for 15-18 minutes or until filling is set and tops are golden brown.
