Tasty Tuesday

For the life of me I cannot find where I found this recipe! All I know is that a friend introduce me to it because it's quick, easy, and filling. I'll admit that when my friend mentioned that it was a recipe for Pork and Beans, I instantly expressed that I was not interested. You see, when I was growing up my dad would always eat beanie weenies and rice which eventually lead to my unfavorable opinion of it. Haha. However, this recipe is delicious because you actually use pork loin instead of hot dogs.

2 lb boneless pork loin
1 small onion, diced
1 cans pork and beans, 26oz.
1 can kidney beans, 15oz.
1 cup barbecue sauce
1/4 cup brown sugar

1) In crockpot, combine onion, pork and beans, kidney beans, barbecue sauce, and brown sugar. Mix well, then add pork loin. (Note: You can cut loin in half or place whole loin in crockpot).
2) Cover crockpot and cook on low for 8 hours or until pork is tender.
3) Once roast is tender, shred with two forks. (Note: I choose to shred the meat in the crockpot but you can remove the pork loin from pot to shred.)
4) Mix shredded pork and beans well then serve.
