Here is a quick and delicious recipe that a friend shared with me. Normally my kids are not fans of tuna or shrimp BUT they loved this recipe.
Seafood Stuffed Shells
Ingredients:
1 T butter
1 onion
1 block of cream cheese
1/2 cup milk
1/2 t pepper
1/2 t salt
1/2 t dried thyme leaves
1 can light tuna (drained)
2 oz. frozen small shrimp (thawed and chopped)
2 T grated Parmesan cheese
1 package of jumbo macaroni pasta
1/2 cup shredded Swiss cheese
Directions:
- Preheat oven to 400*F. In large pot, bring salted water to a boil. Then in a medium saucepan, melt butter over medium heat. Add onion and cook until crisp-tender; stirring occasionally.
- Cut cream cheese into cubes and add to saucepan a;ong with milk, salt, pepper, and thyme. Simmer until sauce blends; stir occasionally. Reserve 1/2 sauce. Next, add tuna, shrimp, and Parmesan cheese to reserve sauce.
- Cook shells in water until almost al dente. Drain, rinse shells in cold water, then rinse again. Stuff shells with seafood mixture.
- Pour half of the sauce in a 2 quart baking dish. Top with the stuffed shells, then pour over remaining sauce and sprinkle shells with Swiss cheese. Bake for 20-25 minutes or until cheese melts and begins to brown.
Note: Keep in mind that you can add any seafood into this recipe. My husband doesn't like tuna, so next time I will add crab.
