Tasty Tuesday

Thanksgiving is over but that doesn't mean that you can't still enjoy some yummy pumpkin pie! Did you know that the average piece of pumpkin pie can have around 323 calories per serving (1/8)? Yikes! That can add up to a lot if you eat more than one slice....like me. Well, I hit the jackpot with the recipe I will share below. I forgot to take a picture, so I guess I'll have to remake the pie and update this post. :)

Serving size: 8

15 oz. canned pumpkin (puree not pumpkin pie filling!)
2 tablespoons light butter (I used Smart Squeeze. It has 5 calories in 1 tablespoon.)
1/4 cup Splenda
1/2 cup light brown sugar
1/2 cup unsweetened almond milk
1 large egg
2 large egg whites
1/4 teaspoon nutmeg
1/2 teaspoon cinnamon
1 teaspoon vanilla extract

  1. Preheat your oven to 350℉ 
  2. In a large bowl, beat pumpkin puree, butter, egg, egg whites, milk, vanilla extract, nutmeg, cinnamon, splenda, and brown sugar until smooth.
  3. Spray a 9 inch pie pan with non-stick cooking spray, then pour mixture into pan.
  4. Bake for 45 minutes or until knife comes out clean.
  5. Allow to cool, then cut yourself a slice & enjoy! 
With the ingredients I used, I managed to slash the calories down to 90 per slice!  Keep in mind that the calories will differ depending on the ingredients you use. Miss the crust? I understand! I love crust. The great thing about this recipe is that it is still "skinny" if you add a crust. A pie crust (depending on which one you use), will add around 100 calories per slice. 190 versus 323 is still amazing!

General Mills Monster Cereals Review

Vampires, ghosts, wolves, and mummies, oh myyyy!
If you've been to Target recently, then you probably seen the super cool retro Monster cereal boxes. 
Yup, Target took a step back in time and re-released monster cereals PLUS re-introduced two flavors: Fruity Yummy Mummy and Frute Brute!!! Oh and let's not forget about the Monster Bash Magazine that came with your purchase of (3) Monster Cereals in a single transaction (purchased between 10/1-10/31). Although the Monster Bash magazine is filled with yummy recipes & tips, my little goblins and I decided to keep things simple with our Monster cereal samples.
Pictured above is my fall/Halloween themed breakfast. I made myself a tasty omelet with a bowl of oats mixed with pumpkin puree and topped with Fruity Yummy Mummy. Wow, can we say delicious?! My little goblins decided to keep the retro theme going and enjoyed their cereal with good ol' fashioned milk.

Halloween will quickly be over, but don't let that stop you from enjoying a spooktacular breakfast.
