Tip-a-licious Thursday

Here at Frugalicious Mommy, we believe that you can be frugal and fashionable! Often times people tend to think that frugal means that you have to look shabby...soooo NOT true!

For the past several months I have been itching to change my hair up but was not quite sure what to do with it. I've been wanting to do the whole ombre thing but I just couldn't see myself spending $160+ for some hair color. Being the frugal lady that I am, I decided I would experiment on my hair with the new L'Oreal Wild Ombre kit that I got for $3.46 (after coupons and gift card). Here is what I ended up with:

I think the end result is great! What you think?

So what is my tip? Don't be afraid to try things out! You could end up with something great and save yourself tons of money. Worst case scenario: I had black hair color to cover it up with. :)

Tasty Tuesday

Since the start of January, my family and I have been making small, healthy changes to our diet. A perfect example is pictured above. Don't be fooled - that's not meat! We actually had portobello mushroom burgers topped with lettuce, tomato, steamed kale, and fresh mozzarella. Ohhhh and let's not forget the bun!!! I made delicious buns using this recipe:

4 1/2 cups all-purpose flour or you can use half whole wheat/half all-purpose flour
2 1/4  teaspoons active dry yeast  (equals .25 ounce packet)
1 1/2 tablespoons white sugar
2 tablespoons flax seed, ground (optional)
1 1/2 teaspoons salt
1 cup milk
3/4 cup water
2 tablespoons butter
1 egg

1. In a small saucepan, heat milk, water and butter. Simmer, then remove from heat, and let stand until lukewarm.
2. In a large bowl, mix dry ingredients together - flour, yeast, flax seed, sugar and salt. Slowly add wet ingredients into flour mixture and stir until dough has pulled together. Knead dough on a lightly floured surface for approximately 8 minutes. Place dough in greased bowl, turning to coat. Cover and allow dough to rest until  it has doubled in size.
3. Divide dough into 12 equal pieces. Shape into balls, and place on a greased baking sheet. Flatten slightly. Set aside and let rise for 30 minutes.
4. Preheat oven to 400 degrees F. In a small bowl, beat egg and lightly brush top of buns. *I decided to sprinkle a little more flax seed on top of buns.
5. Bake for 10 or until golden brown.

Next time I think I may substitute the sugar with honey. I'm quite sure that a touch of honey would taste heavenly!

Wordful Wednesday

Like most people, my New Year's resolution was to live a healthier lifestyle. My family and I did not always eat high fatty, greasy meals like the two images (on left) pictured below, but we did indulge in them a little too often.
I began reading a lot about eating organic and going vegetarian, however, I'm not sure that our family is completely ready to go meatless...yet. Overall, I think we have done a fantastic job of incorporating more fruit and veggies into our diet. I have also become obsessed with making my own whole wheat breads (check out the biscuit in the top right picture and the whole wheat baked corndogs on the bottom right).

So far, I would have to say that 2013 is shaping up quite well! I still need to work on certain areas like adjusting our budget to afford more organic products, but that will be sorted out shortly. I'm just happy that my family has adjusted so well to our new food choices. Although my husband did mention that I reminded him of this commercial:

Tasty Tuesday

I must admit that the picture below is making me hungry! Dinner was fantastic and I made it with some items I already had in the frig.

Chicken with Mushrooms
3 cups sliced mushrooms
4 skinless, boneless chicken breast halves
2 eggs, beaten
1 cup seasoned bread crumbs
2 tablespoons butter
6 ounces mozzarella cheese, sliced
3/4 cup chicken broth

1. Preheat oven to 350 degrees F (175 degrees C).
2. Place half of the mushrooms in a 9x13 inch pan. Dip chicken into beaten eggs, then roll in bread crumbs. 3. In skillet, melt butter over medium heat. Brown both sides of chicken in skillet. Place chicken on top of mushrooms, arrange remaining mushrooms on chicken, and top with mozzarella cheese. Add chicken broth to pan.
4. Bake in preheated oven for 30 to 35 minutes, or until chicken is no longer pink and juices run clear.

My tweak to recipe:
I sauteed my mushrooms with diced onions and minced garlic prior to placing in the pan (Step 2).

Note: I do not claim this recipe as my own. This recipe along with ratings and reviews can be found here.
